Place the lid on the slow cooker and cook on a low heat for 8 hours. Close the lid and cook on low for 8 hours. Add the bbq sauce and spread over the whole pork shoulder. I recommend cooking low and long wherever possible since the longer cooking time will lend to a more tender pulled pork. Cook for 8 10 hours on low or 4 5 hours on high.
Remove from oven cut thick layer of fat off top and discard. In the bowl of a slow cooker whisk together the bbq sauce chicken stock apple cider vinegar and liquid smoke. Cook on low for 7 hours or high for 5 hours. Alternatively you may cook on high heat for 4 hours. Place roast into the mixture.
Cook for 1 hour more. Place the pork shoulder in a slow cooker. In your slow cooker place the diced onion and garlic in the base add the pork shoulder and season well with salt pepper. Spoon over 1 4 cup fat from slow cooker juices then roast 15 minutes. Pour the bbq sauce over top of it so that it s completely covered.

Scoop fat off surface of juices in slow cooker and drizzle over pork about 1 3 cup then roast pork for 20 minutes.
