New Orleans Creole Gumbo

This authentic new orleans gumbo is made with a dark roux vegetables chicken sausage and shrimp and served over rice. The only thing more new orleans than a dented pot of gumbo simmering on the back burner is arguing about the right way to make it. To serve pour 1 1 2 cups of gumbo into each bowl over 1 2 cup rice.

Melt 2 ounces of margarine in a large soup pot. Meanwhile melt 2 tablespoons of bacon drippings in a skillet and cook the okra with vinegar over medium heat for 15 minutes. It is full of sausage shrimp the holy trinity of vegetables okra and a dark roux. Blend this brown roux with the file and some of the gumbo liquid and add to the gumbo. Simmer for 1 1 2 hours.
