This recipe was in a book of notes from my grandmother and tastes amazing. Home made from homegrown produce. This beetroot relish is a great way to preserve beetroot and serve it up easily and in a tasty way. You can make this relish in advance and keep it in a sterilised sealed jar in the refrigerator. It can also add a zesty flavour to sandwiches cheese plates and burgers such as our honey mustard beef burgers.

Cooking time 35 mins. Works for cheeseboards and is vegan and gluten free. A recipe to enjoy with cold meats salad sandwiches and cheese. A lovely beetroot relish recipe submitted by one of our recipe club members. Prep time 15 mins.

Simmer uncovered stirring occasionally about 30 minutes or until beetroot is tender and relish is thick. I bought a kilo of beetroot at the market where it was just 2 80 a kilo. Stir over high heat without boiling until sugar dissolves. The texture can be adjusted to your own liking and i suggest it be somewhat chunky to give a contrast to the smoothness of the lamb.
