In medium bowl toss peppers with oil 1 2 teaspoon salt and 1 4. For the marinade mix together 1 cup water 1 cup vinegar 6 pressed garlic cloves 6 tbsp of sugar 2 tbsp of salt. Cut the peppers into 2 or 4 pieces. The grilled marinated peppers are almost better than roasted red peppers. Roasting or grilling for about 10 minutes is usually enough.

Remove the peppers from the bag reserving the marinade for later as a delicious dressing. Zucchini yellow squash green peppers or cherry tomatoes would be good too.
