I bought some fresh flounder and decided to use my crab cake recipe with a couple of changes to make a stuffing. Sprinkle flounder with salt and pepper. This stuffed flounder is filled with a mixture of crabmeat crushed crackers mayonnaise and seasonings. Remove from the heat and place mixture into a bowl. Place equal amounts of filling onto each fillet and roll up.
Preheat the oven to 350 degrees f. Stuff the flounder with the crab cake mix and press the sides down to cover the filling. Add the shrimp and season with salt and old bay to taste. The stuffing can also be used to stuff lobster shrimp or any other fish. Using a fillet knife carefully open the flounder by cutting along the left and right sides of the seam down the middle.
